Fresh Broccoli Salad

Yield: 8 servings

4 1/2 cups small broccoli florets
1/2 cup plus 2 tablespoons raisins
1/2 cup chopped red onion
1/2 cup chopped honey-roasted peanuts
1/2 cup nonfat or light mayonnaise
1/3 cup nonfat or light sour cream

1. Combine the broccoli, raisins, onion, and peanuts in a large bowl.

2. Combine the mayonnaise and sour cream. Add to the salad and toss to mix.  Cover and refrigerate for at least 2 hours before serving. Stir in a little more sour cream or mayonnaise if needed.
