Caesar Chicken & Pasta Salad (#2)

Yield: 4 servings

12 cups chopped or torn romaine lettuce
2 cups diced cooked chicken breast
2 1/2 cups cooked and chilled whole grain rotini pasta (about 4 ounces dry)
3 tablespoons grated Parmesan cheese

DRESSING
1/2 cup nonfat or low-fat mayonnaise
2 tablespoons extra virgin olive oil
2 tablespoons grated Parmesan cheese
1 1/2 tablespoons lemon juice
1 1/2 teaspoons Dijon mustard
1 teaspoon crushed garlic
1/4 teaspoon ground black pepper

1. Combine all of the dressing ingredients in a mini blender jar or food processor and process until smooth. Set aside.

2. Place the romaine, chicken, pasta, and Parmesan in a large bowl. Add the dressing and toss to mix. Serve immediately.
