Mandarin & Cranberry Spinach Salad

Yield: 4 servings

6 cups coarsely chopped or sliced fresh spinach leaves
1 1/2 cups chopped fresh broccoli florets
11-ounce can mandarin oranges, drained
1/2 cup sliced scallions
1/3 cup nonfat or light raspberry vinaigrette salad dressing
1/3 cup dried cranberries
1/3 cup chopped walnuts
1/3 cup crumbled reduced-fat feta or blue cheese

1. Place the spinach, broccoli, oranges, and scallions in a large bowl. Add the dressing and toss gently to mix.

2. Divide the salad between 4 salad plates or bowls and top each serving with some of the cranberries, walnuts, and cheese. Serve immediately.
