Orange Whipped Sweet Potatoes

Yield: 10 servings

3 pounds fresh sweet potatoes, peeled and cut into 3/4-inch chunks
1/4 cup light brown sugar*
3 tablespoons soft trans-free margarine or canola-butter spread
2 tablespoons frozen (thawed) orange juice concentrate
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg

1. Place the potatoes in a large pot and add water to cover. Bring to a boil, and then reduce the heat to medium-low. Cover and simmer for 10 to 12 minutes, or until the potatoes are soft.

2. Drain the potatoes, and return them to the pot. Add the remaining ingredients and mash with a potato masher or beat with an electric mixer until smooth. Serve hot.
