Citrus-Glazed Pears

Yield: 4 servings

3 tablespoons orange juice
2 tablespoons water
2 large firm but ripe pears, halved lengthwise and cored
2 tablespoons all-fruit orange marmalade
1 tablespoon trans-free margarine or butter
1/4 teaspoon ground ginger
3 tablespoons sliced almonds

1. Place the orange juice and water in a medium-large nonstick skillet and stir to mix. Arrange the pears, cut side down, over the juice mixture. Cover the skillet and cook over medium heat for about 6 minutes or just until the pears are tender. Add a little water during cooking if needed to maintain at least 1/4 cup of liquid in the skillet.

2. Remove the pears from the skillet and place one pear half in each of 4 serving dessert dishes, cut side up.

3. Add the marmalade, margarine or butter, ginger, and almonds to the skillet and stir to mix. Cook and stir, uncovered, over medium heat for a minute or two or until the mixture is syrupy.  Spoon the sauce over the pears and serve immediately.
