Cold appetizers
Pineapple, Ham & Cheese Skewers

Yield: 24 appetizers

24 toothpicks
24 pieces scallion (about 3/4-inch long)
24 wedges (about 3/4-inch) fresh pineapple
12 round thin slices lean ham (about 6 ounces), cut into half-rounds
3 ounces reduced-fat white cheddar cheese, cut into 24 pieces (each about 3/4-inch square and 1/4-inch thick)
Light Honey-Mustard Dipping Sauce (page 000) (optional)

1. Use a toothpick to skewer one scallion piece and one pineapple wedge. Fold one piece of ham in half and then in half again to form a triangle and skewer with the toothpick. Finish off with a piece of cheese.

2. Place the skewers on a lettuce lined serving platter and serve immediately or cover and chill for up to several hours before serving.  Serve with the Honey-Mustard Dipping Sauce if desired.

Honey-Mustard Dipping Sauce

Yield: about 1/2 cup

2 tablespoons plus 2 teaspoons Dijon or spicy mustard
2 tablespoons honey
1/4 cup nonfat or light mayonnaise
2 to 3 teaspoons water

1. Combine the mustard and honey in a small bowl and whisk to mix. Whisk in the mayonnaise and water.

2. Serve immediately or cover and chill until ready to serve.
