Chipotle chiles

Chipotle chiles are dried smoked red jalapeno peppers. They add a hot and smoky flavor that enhances chili, sauces, and many other dishes. Chipotle chiles are frequently canned in adobo sauce (vinegar-tomato sauce) or may be sold as dried flakes. Chipotle chiles are typically found in the Mexican or international section of most grocery stores.

A convenient way to use canned chipotles in adobo sauce is to puree the entire can of chiles with the sauce, and freeze in ice cube trays. The frozen cubes can then be stored in a freezer bag until needed.

Caution: Always be sure to wear protective gloves when handling hot chilies.
