Prosciutto

Prosciutto (or prosciutto crudo) is a seasoned, cured and air-dried Italian ham. It is uncooked, but because it has been salt-cured, it is ready to eat. Prosciutto is available in the deli section of most grocery stores is typically sliced paper thin and vacuum packed. Raw prosciutto is often served with fresh melon, figs, or mozzarella cheese. Prosciutto is also a good substitute for bacon in many recipes and is usually lower in fat. Look for brands with very little fat marbled throughout and read the nutrition facts label to be sure. Like most ham, prosciutto is very high in sodium, so use it sparingly.
