Widely used in Mexican cooking, queso fresco literally means “fresh cheese.” Queso fresco is a firm textured white cheese with a mild, slightly salty taste. It has a moderate fat content (about 6 grams of fat per ounce) and is good for crumbling over salads, enchiladas, tacos, black bean soup, and other dishes. Queso fresco is also good in quesadillas. It softens when heated, but does not melt like cheddar or Monterey Jack.
