Greek Yogurt

Greek-style yogurt is thicker and creamier than American-style yogurt.
It has a mild, lightly sweet flavor that is delicious even without
added sweetener. The rich texture is achieved by draining yogurt
to remove part of the whey (liquid portion). Greek yogurt is a perfect
base for dips and spreads, parfaits, and desserts. Try it topped with
some fresh berries or walnuts and a drizzle of honey.
Be aware that some brands of Greek yogurt are made from whole milk, so
are quite high in fat. Keep calories and fat under control by choosing
Greek yogurt with 2% or less milk fat.
To make your own Greek-style yogurt:
You can make your own Greek yogurt with any brand of plain or flavored
yogurt that does not contain gelatin or vegetable thickeners such as
carrageenan , guar gum, or modified food starch (pectin is OK).
Place the yogurt in a special yogurt cheese funnel (or use a large
funnel lined with cheesecloth or a coffee filter). Let the yogurt drain
into a jar in the refrigerator for an hour or two or until the yogurt
is reduced in volume by about one-third.
